Sunday Supper Spotlight: The Taco Truck

The Taco Truck of Morristown will be donating a Fiesta pack catering package, as shown in this photo, as a silent auction prize for the Morris County Sunday Supper Series on Sunday.

Serving "authentic Mexican street food" that incorporates organic and locally-grown ingredients whenever possible, The Taco Truck isn't about your grandfather's standard enchiladas.

"We offer upscale dishes that honor traditional Mexican recipes in a casual, comfortable environment," said Chris Viola, 33, founder and chief operating officer of The Taco Truck.

Originally launched as a truck in Hoboken and Jersey City in 2009, the five-year-old franchise expanded and ultimately converted to brick-and-mortar outlets, including the Morristown location on 50 Morris St., which opened in August 2013.

Viola said they pride themselves on using such natural, local and seasonal ingredients as Jersey corn in tacos, tortas (Mexican sandwiches), salads and other specialties.

During Sustainable Morristown's Sunday Supper event on September 21, The Taco Truck will provide samples of its popular new Kale con Papas — kale and potato tacos — featuring fresh kale from local farm partner Jeff's Organic Produce of Monroe Township and topped with Mexican fresh cream and queso cotija (a crumbled fresh cheese).

Participating in the Sunday Supper Series for its second year in a row, "we've worked closely with the Sustainable Morristown organization on other events and the initiative aligns closely with our corporate commitment to sustainability," said Viola, who noted that The Taco Truck actively engages in such green activities as the use of energy-efficient products like LED lighting, composting of food waste, reusing and recycling.

"Sustainability is a big part of our lives and business practices and we love to educate our employees and guests about it," he said.

Excited to promote The Taco Truck's fresh fare and sustainable practices within the community, "Sustainable Morristown's Sunday Supper Series represents a perfect opportunity for people to enjoy delicious food while supporting a great cause," Viola said. "We hope people will eat more tacos!"
